What is saffron
Saffron, known as “gold red,” is a precious spice obtained from the stigmas of the flower Crocus sativus. Its bright yellow-orange color and intense flavor make it a unique and sought-after product.
The saffron journey from field to table is an artisanal process that requires special dedication. It all starts with hand planting the bulbs in the soil, an operation that requires skill and attention to ensure optimal growth. After a couple of months, the bulbs bloom, producing beautiful flowers from which they are harvested. This occurs at dawn, when the flowers are still closed to protect the delicate stigmas. Once harvested, the stigmas are separated by hand and subjected to careful drying, which preserves aroma and nutritional properties. This is the only way to obtain the highest quality, pure and authentic saffron.

It is often used in risottos, such as the famous risotto alla milanese, and in Spanish paellas, where it goes well with fish and seafood. How to use saffron in cooking
To make the best use of it, it is advisable to let it steep in a hot liquid, such as broth or water, before adding it to preparations. In this way, all its aromatic qualities are released, making each dish an extraordinary culinary experience.
