Saffron chicken in sausage chips
- 1 teaspoon of saffron stigmas

- 4 chicken thighs, with skin, raw
- q.b. extra virgin olive oil

- q.b. chicken or vegetable stock
- 100 ml cooking cream
- 2 tablespoons flour
- Salt and pepper to taste
- q.b. chopped parsley
Saffron, a versatile spice

In this dish, we soak the stigmas in hot broth. Meanwhile, we cook the drumsticks and chicken thighs in a casserole dish. Only at the end do we add flour. broth, cream, saffron and parsley for an enveloping and mouth-watering sauce.
